Mrs Bennet’s Recipe: Cocoa Cookies

For those of you with a sweet tooth who may like a little something to nibble on while you are sipping and reading here is a recipe for Cocoa Cookies. They are thin, wafer like cookies and very flavorful.

Pre-heat oven to 350


2 ¼ C flower

1C plus 2 tbs. unsweetened cocoa powder

1 2/3 C sugar

3/8 tsp. salt

3/8 tsp. baking soda

1C plus 5 tbs. butter, slightly softened

4 ½ tbs. milk

1 ½ tsp. vanilla


In a food processor, combine first 5 ingredients

Pulse several times to mix thoroughly

Cut butter into about 12 chunks and ad to the bowl

Pulse several times

Combine milk and vanilla in small cup

With the processor running, add milk mixture and continue to process until the dough clumps around the blade or the sides of the bowl.

Transfer dough to a bowl or cutting boad and kneed with your hands a few times to make sure the the dough is evenly blended.

Portion dough into equal 3rds.

Shape into logs (7” long by 1 ¼ “ diameter) wrap in waxed paper and refrigerate for 1 hour

Line cookie sheet with parchment paper

Cut logs into ¼ inch slices and arrange on cookie sheet 1’ apart

Bake 12 to 15 minutes, rotating cookie sheet about half way through

As they bake the cookies will puff a bit and then deflate. Thry are done about 1 minute after they deflate – they will feel dry but soft when touched.

Slide the parchment onto a rack and let cool completely.
